[Simple Pizza Recipe]
Here is list of ingredients. Pizza actually has no limitation on ingredients, you can literary add in anything you can think of, some green vegetable such as rocket is highly recommended. You may replace with seafood, add in prawn will be good idea as well.
I use Pasta tomato puree which is already season to taste, personally I found it to be a little bit too sweet. I recommend to purchase pure tomato puree and adjust taste based on your preference.
Making of Pizza Dough is actually pretty simple.
- Mix 2 cup of warm water with Yeast and let it rest for few minutes, you should see some bubble coming up. If no bubble which mean the yeast is not active, don’t waste your ingredients, start new yeast and make sure got bubble.
- Mix in the rest of the ingredients and let it rest for 1hour or double in size.
- You may cover it and let it rest anywhere or personally I prefer to just throw it into oven (without turn on), I stay at Malaysia where temperature around 30+ Celsius.
Making Pizza Topping
- Most of the pizza topping need to be cook up front because baking Pizza just take around 7 to 10 minutes which might not enough for some ingredients to fully cooked.
- Pizza topping can be anything but the tomato based with pork is highly recommended, it add extra texture and flavor to it.
Preparing Pizza
- Once the pizza dough is ready, just make it flat with hand or roller if you have one. It can be any shape if you are ok with it. (obviously, mine is the most ugly pizza ever)
- You may skip butter if you don’t wan your pizza to be too greasy but personally I found adding butter make it more fragrance.
- I always applied tomato puree and mince pork at bottom layer follow with whatever ingredients of my choice.
- My house left with Cheddar so for this Pizza it only has Cheddar which is great in taste but lack of the springy, chewy texture.
- I baked in 220 Celsius with Top & Bottom option for 7 minutes.
- Green such as broccoli or Rocket leaf always has to be add after cook or 1 min before cooked, else it will turn black easily.

- Sugar (60g, can reduce to taste)
- Salt (half spoon)
- Bread Flour (around 3 cup)
- Butter/Olive Oil
Sautéed Mushroom

Tomato Based Mince Pork
- Pork or Chicken Minced
- Pepper
- Sugar
- Salt
- Flour
- Garlic
- Onion
- Tomato
- Tomato Puree
Other Ingredients
- Sausage
- Artificial Crab Meat
- Onion
- Tomato
- Cheese (Recommend Mozzarella and Cheddar mix)
- Broccoli

在暫住的家附近有一間專門賣歐式麵包的人氣店,我們每天都會到那裏買不同種類的歐式麵包當早餐,那店在新年連續放了三天假,想起家中有一部不錯的焗爐,也有一個漂亮陶製的陶鍋,所以便買了一包高筋麵粉,決定自己動手做麵包。
這個食譜早在2006年發佈,食譜的來源來自美國一名麵包店的老闆,他稱這個免揉麵包食譜簡單得四歲小孩也能做到,而且做到麵團的要求不高,無論低、中、高筋粉也能做到,就算有些步驟做得不太到位也不會失誤,輕輕鬆鬆便能焗出好吃的麵包。
做這個麵包唯一要求的,就是要有足夠時間讓麵團發酵(約12-18小時)。不用人手揉麵,只需要將四種材料拌勻,只要有足夠的時間,酵母便會促成麵筋的形成。
這個食譜真的超級容易,就是按著食譜的要求做便可以了,連續做了兩次也是超級成功,我特別喜歡吃硬皮的歐式麵包,所以當製成品出來的時候真的不敢相信那麼容易便做到了。
想不到這短短在酒店暫住的期間,沒有了攪拌機在旁,反而沉迷了做麵包來呢。

材料
高筋麵粉430克 (再加多點用來處理麵團用)
酵母 1/4茶匙
鹽8克
水317毫升 (室溫)
工具
可放入烤箱的有蓋燉鍋或鑄鐵鍋約5.5-7.5升,影片用到的尺寸為直徑25厘米高7厘米的燉鍋
做法
1. 一次發酵:室溫12至18小時 (最佳為21度)
2. 冷藏(可略):12小時
3. 鬆弛:十五分鐘
4. 二次發酵:室溫2小時
5. 烤焗:預熱260℃,加蓋以260℃焗30分鐘,再去掉蓋焗20分鐘
詳細做法
在一個容量較大的拌碗裏(麵團發酵後會脹大一倍以上),將所有材料拌勻,蓋上保鮮膜。
放置在室溫(最佳為21度)12至18小時。
放在雪櫃冷藏十二小時(此步驟可略)
在檯面加一點麵粉,取出麵團,輕輕按壓麵團,然後將麵團的外圍向內摺,反轉。用保鮮紙輕輕蓋上,等待十五分鐘。
在一個拌碗內,舖上牛油焗紙,將麵團放進去,灑上少許麵粉,用毛巾蓋好,放置在室溫2小時。
在烤焗之前一小時,先開焗爐260度,放入將要用來焗麵包的鍋子(連蓋),讓鍋子(連蓋)預熱一小時。
取出鍋子,麵團連牛油紙一起放入鍋子裏,加蓋,放入焗爐以260度焗30分鐘,再取走蓋多焗二十分鐘便完成。

5.5-7.5L heavy covered pot (cast iron, enamel, Pyrex or ceramic)
Directions
1. Primary fermentation: Room temperature 12-18 hours
2. Refrigerator (optional): 12 hours
3. Rest: 15 minutes
4. Second rise: 2 hours
5. Bake: Pre-heat 260 degree celsius. Cover and bake for 30 minutes. Uncover and bake for 20 minutes.

We made bread that looks like an Oreo sandwich cookie using our favorite giant Oreo baking mold. We added crushed cookies into the bread, and made a delicious cream sandwich with cream cheese inside.
Recipe (Diameter: 24 cm)
For the bread:
1. Mix 225g of bread flour, 25g of cake flour, 15g of cocoa powder, 15g of black cocoa powder, and 11g of skimmed milk together (we used powdered milk for coffee this time around).
2. Add in 30g of sugar, 3g of salt, and less than 6g of dry yeast (less than 2 teaspoons).
3. Add in 30g of beaten eggs and 145g of water (we used lukewarm water since it was a cold day) and knead them all together.
4. Once the dough has absorbed most of the moisture, mix in 30g of unsalted butter that has been returned to room temperature.
5. Once the dough is smooth, crush seven Oreo cookies and add them in.
6. Firm and round up the dough, add salad oil lightly in a bowl, and carry out the first fermentation (for 40 minutes at 35 degrees Celsius).
7. Remove the gas, round up the dough again, and leave it to sit while covered with a damp cloth (for 15 minutes).
8. Stretch and spread out the dough, and put into the mold.
9. Carry out the second fermentation (for 40 minutes at 35 degrees Celsius).
10. Put it onto a baking sheet on a tray, and bake in an oven that has been preheated to 200 degrees Celsius for 20 minutes.
11. Take it out and leave to cool once it is baked.
For the cream:
12. Mix 60g of cream cheese that has been returned to room temperature, 55g of granulated sugar, and a little lemon juice together.
13. Leave 80g of fresh cream to stand for eight minutes.
14. Add 12 into 13 and mix.
15. Slice 11 into half.
16. Apply 14.
17. It's done! It tastes delicious when dunked in milk! Oreo just has to go together with milk!
妄想グルメおなじみの大きなオレオ型を使って、オレオクリームサンドクッキーみたいなパンを作りました。パンにはクッキーを砕いて入れ、クリームチーズ入りのおいしいクリームサンドしました。
*レシピ*(直径 24センチ)
パンを作ります
1.強力粉 225g、薄力粉 25g、ココアパウダー 15g、ブラックココアパウダー 15g、スキムミルク11g(今回、コーヒー用のパウダーミルク使いました)をザッと混ぜる。

6.とじ口をしっかり閉じ丸め、サラダ油を薄く塗ったボウルに入れ、一次発酵する。(35度 40分)
7.ガス抜きをし、丸め直し濡れ布巾を掛けてベンチタイム。(15分)
8.伸ばし広げ、型に入れる。
9.二次発酵させる。(35度 40分)
10.オーブンシートと重しの天板をのせ、200度に予熱したオーブンで20分焼く。
11.焼き上がったら、取り出し冷ます。
クリームを作ります。
12.室温に戻したクリームチーズ 60g、グラニュー糖 55g、レモン汁 1弱を入れ混ぜておく。
13.生クリーム 80gを8分立てにする。
14.13に12を入れ混ぜる。
15.11を半分にスライスする
16.14を塗る。
17.できあがり。牛乳にドボンして食べるとうまい!やっぱりオレオには牛乳が欠かせない!
