自煮台味蚵仔煎
到台灣夜市你最想吃甚麼?不少人都鍾情蚵仔煎,「蚵仔」是閩南語,即是我們說的蠔仔,蚵仔就是養殖時間短、體型比較小的蠔,從中醫角度來看,蚵仔性平,有滋陰養血、補心安神的功效,適合陰虛、煩熱、失眠、心神不安者食用。而令蚵仔煎有「Q彈」口感就靠地瓜粉,即是番薯粉,用來煮食可以帶出煙韌和酥脆口感。自煮蚵仔煎不算難,難在調校那個充滿台味的醬汁,醬汁味道調對的話,蚵仔煎已成功一半了。
蚵仔煎醬汁
材料:茄汁6湯匙、砂糖3湯匙、醬油膏2湯匙、味噌2湯匙、胡椒粉少許、水600克、太白粉水(或生粉水)適量
做法:所有材料攪拌均勻及煮滾,加入適量太白粉水煮至稠身,放涼備用。
蚵仔煎
材料:地瓜粉1杯、水1.5杯、鹽1茶匙、胡椒粉少許、蔥花10克、蚵仔10-15隻、雞蛋1隻、綠葉菜適量
做法:
1. 蚵仔浸洗乾淨;綠葉菜切粗條備用。
2. 將地瓜粉、水、鹽、胡椒粉及蔥花攪拌均勻,成為粉漿。
3. 熱鑊下油,加入蚵仔略煎,加入一湯勺粉漿蓋住蚵仔,煎至粉漿呈透明狀。
4. 在蚵仔上打入雞蛋,煎至蛋汁略為凝固,將蚵仔煎翻面煎至金黃色。
5. 將蚵仔煎推往一旁,鑊上加入綠葉菜,將蚵仔煎翻面蓋在菜上,熄火上碟。
6. 在蚵仔煎上淋上適量醬汁即成。

Homemade Taiwanese-style fried oyster
What would you like to eat the most when visiting the night markets in Taiwan? Many people are fond of fried oysters. “O-ah”, is the common name for oyster in the Minnan dialect, which is widely spoken in Taiwan.
“ O-ah” in actually a smaller type of oyster. It does not require a long time to mature. From the perspective of Chinese Medicine, this kind of oyster is mild in nature, can nourish the yin and replenish the blood, as well as calm our mind. It is suitable for individuals with yin deficiency, and constantly feel warm and frustrated, as well as those with insomnia problem and a troubled mind.
The secret ingredient that gives fried oyster a nice thick gooey texture is sweet potato starch, which also gives the dish a crispy and elastic texture. You can easily make fried oyster on your own. The more challenging part would be preparing the sauce in Taiwanese style. In other words, getting the taste right would mean you are halfway to success!
Fried oyster sauce
Ingredients: 6 tablespoons of tomato ketchup, 3 tablespoons of sugar, 2 tablespoons of soy sauce, 2 tablespoons of miso, 600ml water, white pepper powder and an appropriate amount of cornstarch water.
Preparation: Make sure all the ingredients are evenly cooked, and then add in an appropriate amount of cornstarch water to thicken the sauce. Cool down to serve.
Fried oyster
Ingredients: 1 cup of sweet potato starch, 1.5 cup of water, 1 teaspoon of salt, 10g chopped green onion, 10 – 15 pieces of oyster, 1 egg, white pepper powder and an appropriate amount of leafy vegetables
Preparation:
1. Rinse the oysters thoroughly and slice the leafy vegetables.
2. Mix and stir the sweet potato starch, water, salt and white pepper powder to become a paste.
3. Heat the pan with oil and fry the oysters until golden, add in the paste until it covers all the oysters; fry until the paste becomes transparent.
4. Beat an egg on top of the oysters and cook until it hardens. Flip the fried oyster over and fry until it is golden brown in color.
5. Push the fried oysters to aside and add the sliced leafy vegetables to the pan; cover the vegetables with the fried oysters. Turn off the heat.
6. Drip some fried oyster sauce onto the fried oyster to serve.

Unless you are southern Taiwanese, you probably never had tomatoes this way! I thought dipping tomatoes in soy sauce was a common way of eating them, cause that’s how my grandma would prepare it and lots of restaurants would serve this as a snack too. The sauce is made of soy paste (thick soy sauce), fresh ginger paste, licorice powder, and a pinch of sugar! While the tomatoes are still in season, and different varieties are available at the farmer’s market, would you want to try this? 😛

老牌魷魚羹排了不少人,守法有禮的小編也順著人潮排隊。
許久,前方阿姨聽到我們討論,突然轉頭過來說:
外帶才要排隊,內用只要先進去找好位子點單就好。
台中阿姨的親切熱情,與小編的遲鈍愚笨成正比(泣)。
主餐的綜合羹:魷魚、肉羹、蝦仁。
沒裹粉實在的生魷魚。
軟嫩肉羹不走一般硬實肉那款。
平凡蝦仁帶有蝦肉的香氣。
讓這碗麵好吃的是全部的合體:
羹湯、九層塔、一大杓的沙茶,加上羹構成了這碗老字號的麵。
每一種都缺一不可。
據我觀察系研究,台中味通常會加上甜辣醬,點羹飯的人算多。
而米粉也是一個不錯的選擇。
小菜海帶豆干是標配,所以牛腱格外的吸引我。
牛腱肉是類似醬香牛肉的作法,剛吃下去第一秒是醬油膏的甜味,但多吃慢嚼後,那肉香慢慢的會溢出來,是道需要嚼食慢吞的一道小菜。

Taichung (West Dist.) LaoPei Squid Thick Soup
The restaurant is in a traditional market called The 5th Market, and there’s always a queue so you can find it easily.
We were in the queue for a while, and a nice lady told us the queue is for take-out, just grab a seat if you want to dine in. The hospitality of Taiwanese is always very heart warming. (smile)
The most popular dish is the combo soup, it contain squid, pork, and shrimp. As always, I love one bowl with all.
The squid without flappy flour wrapping, the tender pork, and fresh shrimp, the fragrance of basil, and some satay sauce, all these make the combo soup so great.
According to my observation, most of local Taichung people will order the thick soup with rice, and add some sweet and sour sauce. The rice noodle is also a good choice. There are some delicious side dishes you can try, like soy bean curd and seaweed, and my top suggestion is the braised beef tendon.
This braised beef tendon tastes different from the ones you have tried in anywhere else, it’s more flavorful and kind of like a seasoned beef jerky (but of course not so chewy).

*香菇雞湯
材料:
雞肉 200公克/chicken 200g
乾香菇 10公克/shiitake mushroom 10g
薑絲 5公克/ginger 5g
枸杞 5公克/goji berry 5g
鹽 1/2茶匙/salt 1/2tsp
作法:
1. 陶瓷內膽中放入乾香菇和雞肉,加入100℃滾水,浸泡約30秒汆燙,再倒除瀝乾水。
2. 再放入薑絲、枸杞,再將內膽放入燜燒罐中,加入100℃滾水至七分滿。
3. 蓋上矽膠蓋,再蓋上外蓋,燜約30分鐘。
4. 開蓋加入鹽拌勻即可。
*地瓜粥+燙A菜
材料:
A
米 70公克/rice 70g
地瓜 80公克/sweet potato 80g
B
A菜 60公克/Taiwanese lettuce 60g
蒜末 適量/garlic q.s.
鹽 少許/salt q.s.
油 1茶匙/oil 1tsp.
作法:
1. 將米洗淨和地瓜放入內膽中,加入100℃滾水,浸泡約30秒,再瀝乾水份。
2. 洗淨的A菜放入內膽中,加入100℃滾水,浸泡約30秒,再瀝乾水份。
3. 再將作法1放入燜燒罐中,倒入滾水至七分滿,蓋上矽膠蓋;再放入A菜倒入滾水至七分滿,再蓋上外蓋燜約1小時。
4. 取出將地瓜粥拌勻,A菜倒除水份後加入蒜末、鹽和油拌勻即可。
*絞肉冬粉+蒸魚片+燙花椰菜
材料:
A
冬粉 2捆/glass noodles 2pcs
絞肉 60公克/minced pork 60g
醬油 1大匙/soy sauce 1tbsp.
辣豆瓣醬 2大匙/chili bean sauce 2tbsp.
蔥花 10公克/scallion 10g
B
魚片 120公克/fish fillet 120g
蒜泥油膏 1大匙/garlic thick soy sauce 1tbsp.
C
花椰菜 60公克/broccoli 60g
橄欖油 1大匙/olive oil 1tbsp.
蒜末 5公克/garlic 5g
鹽 少許/salt q.s.
作法:
1. 取三個燜燒罐內膽,第一個放入冬粉與絞肉、魚片、花椰菜,分別加入100℃滾水,拌一下浸泡約30秒,再瀝乾水份。
2. 絞肉和冬粉加入醬油,再加入滾水至七分滿。魚片和花椰菜分別加入滾水至七分滿。
3. 將冬粉放入燜燒罐中,再蓋上矽膠蓋;接著放入魚片和花椰菜,蓋上矽膠蓋,再蓋上外蓋,燜約20分鐘。
4. 取出後倒除多餘水份;冬粉和絞肉再加入其餘材料A拌勻;魚片淋上蒜泥油膏;花椰菜再加入其餘材料C拌勻即可。
*燙義大利麵+保溫市售肉醬
材料:
義大利麵 80公克/spaghetti 80g
義大利麵醬 120公克/tomoto sauce 120g
作法:
1. 將義大利麵對摺後放入內膽中,加入100℃滾水,拌一下浸泡約30秒,再瀝乾水份。
2. 另一個內膽加入加入100℃滾水,浸泡約30秒預熱,再瀝乾水份,放入市售肉醬。
3. 將作法1的內膽放入燜燒罐中,加入滾水至七分滿,蓋上矽膠內蓋,再放上肉醬、蓋上矽膠內蓋。
4. 蓋上外蓋,燜約20分鐘。
5. 取出倒除義大利麵的水,再加入肉醬拌勻即可食用。

1. 薑糖油膏

4. 搭水煮肉片
〔材料〕
薑糖油膏 適量
蔥段 10公克/chopped scallion 10g
薑片 10公克/sliced ginger 10g
米酒 1大匙/cooking rice wine 1tbsp.
豬肉片 400公克/pork slices 400g
〔作法〕
(1) 水煮滾後放入蔥段、薑片、米酒與豬肉片,滾煮1~2分鐘至肉片變白、熟透後,只撈出肉片,淋上薑糖油膏即可。
