It’s called ‘pagpag’. Food salvaged from rubbish tips in the Philippines.
สิ่งนี้เรียกว่า ‘ปักปัก’ อาหารที่เอามาจากที่ทิ้งขยะในฟิลิปปินส์
It’s cooked, then sold in nearby poor communities.
มันถูกปรุงสุก แล้วก็ขายในชุมชนยากจนใกล้ๆ
We spent one evening following a bag of meat from the rubbish dump to the dinner table.
เราใช้เวลาหนึ่งคืนในการติดตามถุงใส่เศษเนื้อจากกองขยะ ไปสู่บนโต๊ะอาหาร

Stage 1: Collection
ช่วงที่ 1 การเก็บรวบรวม
Rubbish from fast food chains across Manila is delivered to the dump.
ขยะจากร้านฟาสต์ฟู้ดทั่วมะนิลาถูกส่งไปที่กองขยะ

“I have been doing this job for five months now.
ผมทำงานนี้มา 5 เดือนแล้ว
I started work at 12 noon and I’m still working at this hour.
ผมเริ่มงานตอนเที่ยงและเวลานี้ก็ยังต้องทำอยู่
My boss gives me around six dollars a week after he has sold the ‘pagpag’.
เจ้านายผมให้ประมาณ 6 ดอลลาร์ต่อสัปดาห์ หลังจากที่เขาขายปักปักได้
Somehow it’s okay because it helps with house expenses, rice and other food.”

A bag of ‘pagpag’ meat sells for around 50 cents.

Stage 2: Cooking
ช่วงที่ 2 ปรุงอาหาร
I have to go to the market to buy ingredients like garlic, onions.
ผมต้องไปซื้อวัตถุดิบจากตลาด เช่น กระเทียม หัวหอม
(8 am - Norberto’s restaurant / แปดโมงเช้า ร้านอาหารของนอร์เบอร์โต)
“Before I cook it, I remove any bones, to make sure that only the meat goes into the actual food.
ก่อนจะทำอาหาร ผมเอากระดูกออกก่อน เพื่อให้ชัวร์ว่ามีแต่เนื้อที่จะลงไปอยู่ในอาหาร
Once the meat is separated from the bones, I wash it.
หลังจากแยกเนื้อออกจากกระดูกแล้ว ผมก็เอาไปล้าง
After washing, the sauce is simmering in the pan.
หลังจากล้างแล้ว ซอสก็กำลังเดือดอยู่ในกระทะ
Then I mix it all up.
ผมก็เอามาผสมกัน
One bowl costs 20 cents.”

Stage 3: Eating

“I eat ‘pagpag’ because it’s tasty. It’s really good to eat.
ผมกินปักปักเพราะมันอร่อย กินได้ดี
This particular vendor makes clean ‘pagpag’ that’s why more people buy from here.
เจ้านี้ทำปักปักได้สะอาด นั่นคือเหตุผลว่าทำไมคนถึงซื้อเยอะ
It’s about having a strong stomach. Us here? We’re used to it.
ที่สุดแล้วก็คือกระเพาะต้องแข็งแรง พวกเราอะเหรอ พวกเราชินแล้ว
This is what it is. This is what the poor can afford.
มันก็เป็นอย่างนี้แหละ นี่คือสิ่งที่คนจนสามารถมีกำลังพอที่จะซื้อ
As long as we’re here, we will still eat ‘pagpag’.
ตราบใดที่เรายังอยู่ที่นี่ เราก็จะยังกินปักปัก
