[Recipe] I’ve been experimenting with different healthier recipes these days in a bid to watch my health & also brush up on my cooking skills. While I’m healing from the first 2 days of Profhilo, I made this Wholemeal roasted eggplant spaghetti with chicken breast for dinner.
Serves 1. I kept the leftover sauce for another dinner!
Marinara sauce:
4x tomatoes 🍅 peeled
2 x garlic cloves🧄
A dash of water, put to simmer slowly and mash the ingredients together when they start to soften. I also added a can of tomato purée as my tomatoes weren’t flavourful enough, but you can choose to go without.
🍆 eggplants
1/4 eggplant. Chopped and tossed in olive oil with salt & pepper.
Line baking try and roast them for 20 mins, 190 deg C. Flip them halfway through
Then cook the chicken breast and pasta separately! I used chicken breast as my protein as I love it but you can go with minced meat if you’d like. Then toss them all together and enjoy!

Vegan Karaage (Soy Meat Fried Chicken) Recipe
Difficulty: Very Easy
Time: 40min (incl. marinating time)
Number of servings: 4
Ingredients:
100g (3.5oz.) dried soy meat blocks https://amzn.to/3zBFQ4m
* 2 tbsp. soy sauce
* 2 tbsp. sake
* 1 tbsp. grated ginger
* 1 clove grated garlic
* 1 tsp. sesame oil
2 tbsp. Katakuriko (potato starch)
deep frying oil
lemon wedges if preferred
Directions:
1. In a boiling water, cook dried soy meat blocks for 4 minutes. Or as directed on its package. Wash well (change water for a few times) to remove the bad smell, then drain well.
2. Mix the seasonings in a bowl and marinate the soy meat for about 30 minutes. Overnight is okay, longer makes them tasty.
3. Drain lightly (do not squeeze out the marinade liquid), coat with Katakuriko in a plastic bag.
4. Deep fry in oil at 180C (350F) until crisp golden brown.
5. Serve with lemon wedges if you like.

焼き芋とチーズは意外に相性がよく、塩気が焼き芋の甘味を引き立て、アイスは温かい焼き芋にほどよく溶け込んで間違いないおいしさに・・・♡

焼き芋アレンジ2選
■焼き芋のハニーナッツグラタン
1本分
材料:
焼き芋 1本(300g程度)
バター 10g
ミックスナッツ 10g
ピザ用チーズ 40g
塩 少々
パセリ 少々
はちみつ 適量
作り方:
1. 焼き芋の両側を1cm程度残して包丁で横一本の切り込みを入れる。
2. バターを半分に切ったら焼き芋の溝に入れて、ナッツ、塩を加えたらチーズをのせ、パセリをまぶす。
3. オーブントースターで10分程度(表面に焼き色がつくまで)加熱する。皿にのせてはちみつをかけたら、完成!
■焼き芋のチョコバニラアイス
1本分
材料:
焼き芋 1本(300g程度)
バニラアイス 100g
アーモンドスライス 大さじ1
チョコスプレー 小さじ1
作り方:
1. 焼き芋の両側を1cm程度残して包丁で横一本の切り込みを入れる。
2. 大きめのスプーンでアイスをすくいながら、焼き芋のみぞに挟む。
3. 皿に乗せてチョコスプレーとアーモンドスライスを全体に散らしたら、完成!

◆Baked Sweet Potatoes au Gratin with Honey Nuts
Servings: 1 baked sweet potato
INGREDIENTS
1 baked sweet potato (abt 300g)
10g butter
10g mixed nuts
40g shredded cheese
Some parsley
Some honey
PREPARATION
1. Make a shallow cut horizontally on the potato. Leave 1cm for both sides.
2. Cut the butter into halves and place them in the potato. Put mixed nuts and salt. Place shredded cheese on top. Sprinkle with some parsley.
3. Bake for 10 minute in the toaster oven (until golden). Transfer to a plate. Add some honey on top.
4. Enjoy!
◆Baked Sweet Potatoes with Vanilla Ice Cream
Servings: 1 baked sweet potato
INGREDIENTS
1 baked sweet potato (abt 300g)
100g vanilla ice cream
1 teaspoon chocolate sprinkles
1 tablespoon almond slices
PREPARATION
1. Make a shallow cut horizontally on the potato. Leave 1cm for both sides.
2. Place vanilla ice cream in the potato cut.
3. Place the potato on a plate. Add some chocolate sprinkles and almond slices on top.
4. Enjoy!

今回はメキシコ料理のセビーチェと、タイ料理のスイートチリマヨソース!

■メキシコを感じるエビのセビーチェ
2人分
材料:
エビ 6尾
Aライムジュース 50ml
Aレモンジュース 20m
Aオレンジジュース 20ml(果汁100%のもの)
B玉ねぎ 1/4個
Bトマト 1個
Bきゅうり 1/2個
Bハラペーニョ 1/2個
Bパクチー 適量
塩 小さじ1
コショウ 適量
作り方:
1.エビは頭と殻を取り、背ワタを取り除いて身を6等分に切る。
2. Aを混ぜて(1)のエビを漬け込む。(2時間以上)
3. Bは全てみじん切りにする。トマトは中の種を取り除いてみじん切りに、ハラペーニョはワタとタネを取り除き、特に細かいみじん切りにする。
4.ボウルで(2)と(3)を和え、塩、コショウで味を調え冷蔵庫で1時間程冷やし、味が馴染んだら完成!
■タイ風エビのスイートチリマヨソース
2人分
材料:
エビ 180g
A塩 小さじ1
A片栗粉 大さじ1
Bマヨネーズ 大さじ3
Bスイートチリ 大さじ2
B牛乳 大さじ1
片栗粉 大さじ2
揚げ油 適量
フリルレタス 適量
作り方:
1.エビの下処理をする。エビのしっぽや殻をむき、Aの塩をふって揉み込み3分ほど置き、Aの片栗粉を揉み込んだら水でよく洗い水気を拭き取って、背に包丁で浅く切り込みを入れ背わたを取る。
2.Bをボウルに入れよく混ぜてソースを作る。
3.ビニール袋に片栗粉を入れ、(1)の海老を入れて均等に片栗粉をまぶす。
4.フライパンに揚げ油を熱し(3)をこんがりカリッと揚げ焼き、(2)と和える。
5.洗って水気をきり、ちぎったレタスを器にのせ、(4)を盛り付けて完成!

2 World Shrimp Recipes
◆Shrimp Ceviche
Servings: 2
INGREDIENTS
6 shrimp
A
50ml lime juice
20ml lemon juice
20ml orange juice
B
1/4 onion
1 tomato
1/2 cucumber
1/2 to 1 jalapeno
Some cilantro
1 to 2 teaspoons salt
Some pepper
PREPARATION
1. Peel and devein the shrimp. Cut into small pieces.
2. Mix all A ingredients in a bowl. Marinate the shrimp in it (for more than 2 hours).
3. Chop all B vegetables.
4. Mix chopped vegetables and the marinated shrimp in a bowl. Season with salt and pepper. Refrigerate for 1 hour.
5. Enjoy!
◆Sweet Chili Mayo Shrimp
Servings: 2
INGREDIENTS
180g shrimp
A
1 teaspoon salt
1 tablespoon potato starch
2 tablespoons potato starch
Some frying oil
B
3 tablespoons mayonnaise
2 tablespoons sweet chili sauce
1 tablespoon milk
Some frillice lettuce
PREPARATION
1. Peel the shrimp and season with salt (A). Leave for a few minutes. Add potato starch (A) to the shrimp. Rinse the shrimp with water and pat-dry with paper towels. Devein the shrimp.
2. Mix well all B ingredients in a bowl.
3. Put the shrimp in a plastic bag. Toss with potato starch to coat the shrimp.
4. Heat frying oil in a pan. Cook the shrimp (3) in the oil until crispy and golden. Mix the fried shrimp with the sauce (2).
5. Place rinsed lettuce leaves on a plate. Put some shrimp.
6. Enjoy!
