雨水養生重點:「祛濕禦寒,養護脾胃」
糯米:補中益氣、健脾養胃
枸杞子:滋補肝腎,益精明目
糯米珍珠丸子
材料:糯米300克、免治豬肉200克、蝦10隻、馬蹄5粒、雞蛋1隻、蔥1棵、枸杞子10粒
豬肉調味料:生抽1湯匙、糖1茶匙、麻油少許、胡椒粉少許
做法:
1. 所有材料洗淨;糯米浸水2小時後瀝乾;蝦身去殼保留蝦尾,去腸;馬蹄去皮切碎;蔥切粒。
2. 免治豬肉加入調味料拌勻,加入馬蹄粒、雞蛋及蔥粒攪拌至有黏性。
3. 取適量豬肉餡放在掌心,放上一隻蝦,將豬肉餡搓圓,放在糯米上滾一圈平均沾上糯米,放上枸杞子。
4. 將珍珠丸子排在碟上,隔水蒸15分鐘至熟透即成。
注意:扭傷、痛症患者、容易出現胃脹不適者不宜過量服用。要注意糯米性質黏滯滋膩,難以消化、容易礙濕,所以不宜過量食用,以免滯氣引起胃脹。消化力差及有濕疹者不宜多食,小兒及生病時更不宜食用。

Glutinous Rice Balls
Ingredient:300g glutinous rice, 200g minecd pork, 10 prawns, 5 water chestnuts,
1 egg, 1 sprig spring onion, 10 wolfberry
Seasoning:1 tablespoon of soy sauce, 1 teaspoon of sugar, sesame oil, pepper
Preparation:
1. Rinse all ingredients. Soak glutinous rice in water for 2 hours and drain. Remove the shell from prawn and keep the tail on. Peel water chestnuts and dice, dice spring onion.
3. Mix the seasoning ingredients with minecd pork, water chestnuts, egg and spring onion.
4. Use the pork mixture to make small ball with one prawn. Coat with glutinous rice. Put the wolfberry on.
5. Steam for 15 minutes.
Notice:Those with sprains, chronic pain, or those prone to abdominal discomfort should not have any. Note that glutinous rice is more sticky and heavier, which makes it more difficult to digest. It can also lead to stagnated dampness so do not eat too much of it as that can lead to abdominal bloating. Those with weak digestive system, with eczema, those who are sick and children should not have glutinous rice.

#曼食慢语
站在年关当前,回想今年经历的一切,恍如隔世。去年我发布完年夜饭节目,就放下一切琐事,开开心心去旅行了。没想到疫情突如其来,每天发生的一切都好像不真实。年初因为不能复工,我一人在家潜心做菜拍摄,倒也安心平静。今年有很多小伙伴选择留守原地不回家,在家乡的也不像往年一大家子聚在一起了。我们都在为了能和家人朋友健康安全团聚的那一天默默等待着。
不论是小家庭和父母在一起,或者是年轻夫妻独自陪伴,一顿圆满丰盛的年夜饭依旧是中国人少不了的仪式感。所以今年我准备的菜没有往年那么多,食材也都是比较家常的,但美味还是绝不打折扣哦。不论你是打算整桌复制,或者是挑选其中几道菜,都能参考看看。
按照中国人的习俗,过了农历新年才是真正新的开始,希望大家都在新的一年里牛气冲天~也感谢大家又一年的陪伴!祝大家新年健康平安!

内馅:
糯米75g,75g glutinous rice
广式香肠1/2根,1/2 cantonese sausage
干香菇7g,7g dried mushroom
黄酒1大勺,1 tbsp yellow rice wine
姜末1小勺,1 tsp ginger
生抽1大勺,1 tbsp soy sauce
盐1/4小勺,1/4 tsp salt
糖1小勺,1 tsp sugar
白胡椒1小撮,a pinch white pepper
鱿鱼:
大鱿鱼一条约500g,a whole squid about 500g
卤水3L,3L Chinese brine
酱料:
韩式辣酱2大勺,2 tbsp Korean chilli sauce
卤水4大勺,4 tbsp Chinese brine
paprika甜红椒粉1/2小勺,1/2 tsp paprika
蜂蜜1大勺,1 tbsp honey
孜然粉1小勺,1 tsp cumin powder
4、咸柠辣子鸭
鸭腿2个(约500g),2 duck legs (about 500g)
咸柠檬1/4个,1/4 salted lemon
咸柠檬汁1小勺,1 tsp salty lemon juice
干灯笼辣椒2大把,2 handful dried Lantern chili
姜3大片,three slices of ginger
蒜半头,half of garlic
八角1个,1 star anise
水400ml,400ml water
黄酒2大勺,2 tbsp Shaoxing rice wine
糖1小勺,sugar 1 tsp
蚝油2小勺,oyster sauce 2 tsp

5、咖喱牛杂煲
牛腱子400g,400g bovine tendon
牛蹄筋200g,200g cattle hoof tendon
熟金钱肚200g,200gcooked beef tripe
炸鱼蛋80g,80g fried fish balls
咖喱粉1-2大勺,1-2 tbsp curry powder
姜黄粉1小勺(选用),1 tsp turmeric powder
姜片6大片,6 slices ginger
大葱白2大段,white parts of leek
大葱绿1大块,green parts of leek
胡萝卜1个,1 carrot
白萝卜1个,a white radish
干腐竹3-4把,3-4 handful dried yuba
香菜1小把,handful coriander
椰浆100ml,100ml coconut milk
6、干煸豆角 Stir dry green beans
豆角400g,400g green beans
蒜蓉1小勺,1 tsp minced garlic
花椒面1小勺,1 tsp szchuan pepper powder
小米辣2个,2 bird'eye chili
盐1/2小勺,1/2 tsp salt
糖1/2小勺,1/2 tsp sugar
生抽2小勺,2 tsp light soy sauce
7、四喜羊肉烧麦 Lamb Siu Mai
内馅filling:
羊肩肉400g,400g Lamb shoulder
大葱200g,200g leek
姜1小块 , a small piece of ginger
胡萝卜大半根(约150g),half of carrot(about 150g)
木耳8g,8g dried cloud ear fungus
花椒1.5大勺,1.5 tbsp szechuan pepper
白胡椒1/4小勺,1/4 tsp white pepper
香油3大勺,3 tbsp sesame oil
生抽3大勺,3 tbsp light soy sauce
老抽1小勺,1 tsp dark soysauce
黄酒2大勺,2 tbsp Shaoxing rice wine
盐1小勺,1 tsp salt
糖1小勺,1 tsp sugar
五香粉1/2小勺,1/2 tsp five spices power
外皮skin:
饺子皮500g,500g dumpling wrapper
玉米淀粉(防粘用),corn starch
8、腌笃一家亲 Yan Du Xian

まん丸もっちり!中華風ごま団子

材料:
■あんこ
小豆(乾燥) 40g
水 950ml
砂糖 50g
■生地
お湯 160ml
ブラウンシュガー 110g
白玉粉 250g
白いりごま 75g
白玉粉(打ち粉用) 適量
揚げ油 適量
作り方:
1.あんこを作る。ボウルに小豆、水を250ml加えてラップをかけ、一晩置く。
2.ザルに上げて水気を切り、鍋に移して残りの水を加え、中火にかける。沸騰したら蓋をしめ、1時間煮る。
3.小豆が潰せるくらい柔らかくなったら、砂糖を加え、時々かき混ぜながら水分がなくなるまで煮詰める。
4.ボウルに移し、乾燥しないようにラップをぴったりと被せ、粗熱が取れたら冷蔵庫で冷やしておく。
5.生地を作る。お湯にブラウンシュガーを入れてかき混ぜる。
6.ボウルに片栗粉を入れてスプーンで中心をくぼませ、(5)を少しずつ加え、ボウルに生地がくっつかなくなるまで5分ほどかき混ぜる。
7.まな板に打ち粉を振り、生地を置いてひとまとめにし、8等分に切り分ける。
8.1個ずつ丸めて、直径6cm程度になるように押し広げ、中心にあんこを乗せて包み、全体にいりごまをまぶす。
9.180℃に熱した揚げ油に(8)を入れ、ゆっくりと転がしながら揚げる。浮き上がって生地がきつね色に揚がったら、完成!

DESCRIPTION
This is a traditional and popular Chinese classic dessert, served during Lunar New Year and it that will satisfy your sweet cravings.
INGREDIENTS
Red Bean Filling
¼ cup dried red beans
4 cups water, divided
¼ cup sugar
Dough
⅔ cup hot water
½ cup light brown sugar
2 cups glutinous rice flour, plus more for dusting
½ cup sesame seeds
For Frying
7 cups vegetable oil
PREPARATION
Make the red bean filling: In a medium bowl, combine the red beans with 1 cup of water. Cover with plastic wrap and soak overnight.
Drain the red beans, then transfer to a small saucepan with the remaining 3 cups of water. Bring to a boil over medium-high heat, then cover and cook for 1 hour, until soft enough to mash with a fork.
Add the sugar and cook, stirring frequently, until the liquid evaporates and a thick red bean paste forms.
Transfer the red bean paste to a bowl. Cover with plastic wrap, pressing it directly onto the surface of the paste to prevent a skin from forming. Refrigerate until ready to use.
Make the dough: In a liquid measuring cup or small bowl, whisk the hot water with the light brown sugar until the sugar dissolves.
Add the glutinous rice flour to a medium bowl and use a spoon to create a small well in the center.
Pour the sugar syrup into the well and stir for 5 minutes, until the dough is well combined and no longer sticks to the bowl.
Lightly dust a clean surface with glutinous rice flour. Turn the dough out and knead for 5 minutes, until it forms a smooth, round ball. Use a little bit more flour or water as needed.
Divide the dough into 8 pieces. Roll the pieces into small balls, then flatten into discs about ½-inch thick and 2½-inches in diameter.
Place 1 teaspoon of red bean filling in the center of a piece of dough. Fold in the edges to cover the filling, then roll into a ball. Roll the ball in the sesame seeds until the dough is covered. Repeat with the remaining ingredients.
Heat the vegetable oil in a large pot until it reaches 350°F (180°C).
Fry the sesame balls for 15 minutes, stirring frequently, until golden brown. Transfer to a wire rack set over a baking sheet to drain and let cool for 15 minutes before serving.
