{Recipe} Laksa Seafood Pancake
Inspired by the Korean kimchi pancake, this laksa seafood pancake is spicy and delicious thanks to New Moon Laksa Paste which is full of oomph and kick. I used the king top shell which is a good source of protein as it is actually low in fat and trans-fat free. Feel free to add prawns or squid to your liking.
Ingredients (Makes 2 large 20-cm pancakes)
2 Tb Sesame Oil
1 medium sized red pepper, sliced
2 stalks thai spring onion, cut into about 5-cm in length
1 New Moon Braised King Top Shell, cut each slice by half
1 cup all purpose flour
1/4 cup corn starch
40g New Moon Laksa Paste
200ml water (feel free to use coconut milk)
1 tsp white sesame, toasted
For the dipping sauce:
2 Tb soy sauce
2 Tb white rice vinegar
Method
1. In a large bowl, combine the flour, corn starch, water and laksa paste till well-combined. Add in spring onion, red pepper and braised king top shell slices.
2. Heat a nonstick or cast iron pan over medium high heat. Add 1 tablespoon oil and add the batter to the pan, spreading it in an even layer. Fry until browned on one side. Flip the pancake and continue to cook until browned on the other side.
3. Assemble the dipping sauce by combining the sauce ingredients in a small bowl. Serve alongside the pancake.

PARROT FISH ARE IMPORTANT!!
This morning I went to the market (Alabang market) to buy meat and seafood for the whole week since it's holy week na. I enjoyed my usual chit chat with the vendors and buying from my sukis. On my way out of the fish section I passed a stall that was selling PARROT FISH!!!😡😡😡
I literally stopped and said "that's not good and that's not right" while taking pictures .Wawa naman the parrot fishies! Yes pwede kainin but for us divers this is a big No No!!! There are important reasons why we should not eat them and dapat we should educate the fishermen to stop catching these beautiful fish! Please do spare them ... the ocean needs them to regenerate. Read under to be educated. marami naman mga ibang fish yun na lang catch, sell and cook please.
Here is why: (c&p from the web)
Parrotfish eat algae and dead coral*. They spend up to 90% of their day nibbling. In other words, they clean the reef. This is important because most of the reefs across the tropics are being smothered by algae because there are not enough parrotfish and other herbivores out there grazing.
After all that eating, get this: They poop fine white sand – lots of it! Each parrotfish produces up to 320 kilograms (700 pounds) of sand each year.
Their numbers are so depleted, and algae levels are so high, that they cannot be fished sustainably right now anywhere in the Caribbean. These flamboyant, algae-eating, sand-pooping fish need to be left in the water. And when they are left to chomp away, they do a brilliant job. A massive new report concludes that reefs where parrotfish were abundant in the 1980s are the reefs that are healthy now.
O dba sayang naman sila... there is a reason for their existence so please let's not eat them ... alamin natin bago natin kainin. To our Govt. Please educate naman our fishermen... Say no to catching parrot fish! Let's not buy parrot fish so they wont catch them anymore. #mostcolorfulfishiesunderthesea
