Marinate your chicken wings using this delicious homemade rempah (spice paste) and reducing it into a thick sauce, every bite of your chicken wing will be bursting with flavour.
This recipe uses luscious pandan and coconut infused basmati rice as a base for crispy chicken wings, sambal lady's finger and not forgetting the classics, sunny side up and fried ikan bilis.

2 cups Basmati rice grains
250ml Water
2g dried Blue Pea flowers (green stems removed
250ml Coconut milk
4 pieces Pandan leaves (tear each leaf into half and tie them into knots)
3 slices Galangal (lightly smashed)
1 stalk Lemongrass (white part only, lightly smashed)
Spices for marinate:
8 pieces Large chicken wings
4 pieces Red chilli
2 pieces Chilli padis
2 pieces Candles nuts
1 piece Lemongrass (white part only)
1 knob Galangal
1 knob Turmeric
2 tsp Gula melaka / raw sugar
½ tsp Cumin seeds
½ tsp Fennel seeds
300ml Coconut milk
4 tbsp Tamarind juice (1 tbsp of tamarind pulp to 6 tbsp hot water)
Salt to taste
For frying:
2 tbsp Cornflour
8 tbsp Potato starch
Salt to taste
½ tsp Baking soda
½ tsp Baking powder
Sambal Spices:
300g Lady’s fingers (sliced)
6 Red chillies
3 Chilli padis
3 cloves Garlic
6 Shallots
20g Dried shrimps
10g Belachan
3g Torch ginger bud
1 tbsp Light soy sauce
1 tsp Sugar
Side Condiments:
8 slices Cucumbers
150g Fried ikan billis
100g Fried peanuts
4 Fried eggs
4 sheets of banana leaves for serving

I love making my own soy milk these days. After each filter of the boiled soy milk, those insoluble parts are the soy pulp that is also known as Okara. I always find it too wasted to throw away the leftover soy pulp or any leftover fruit and vegetable pulp from juicing. So I tried to find ways to use them. This Time I am trying to make hummus with these pulp instead of chickpeas. Oh My, I must tell you, we love it. You must have Tahini for this recipe to make it taste even better. I used to also make my own Tahini from raw sesame. But to make life easier, I am giving you an easier option to try. just buy the ready made Tahini. Tahini or tahina is a Middle Eastern condiment made from toasted ground hulled sesame. Go try it!
Ingredients for 1 medium plate :
. 1 3/4 cups Soy Pulp/Okara
. 1/4 or 1/2 cup lemon juice (I have actually added more than 1/4 cup in the end, as we like sour taste)
. 5 tbsp extra virgin olive oil
. 2 tbsp chopped garlic or more
. 1 tbsp cumin powder
. 1 pinch of coriander powder
. 2 tbsp Tahini, you can add more
. 1.5 tsp salt or less
To serve :
. Pita bread
. Naan bread
. Carrots
. Celery
. Cucumber
. or spread it on bread
Super easy, healthy, quick and satisfying dip/dish. I have been making this non stop now.

Lai Yee's Kitchen - Spicy Taucu/Fermented Soybean Paste Steamed Fish 酱蒸鱼
I love my food with gravy. When you have fresh fish, steaming them with sauce is the best way to enjoy. Steamed fish are healthy, easy to prepare and extremely delicious. It is even more so when paired with a simple fermented bean paste sauce. You can use this recipe to steam other types of fish like cod, grouper, red snapper, trout or bream and Nile Tilapia. Simple, fast and super comfort!
Ingredients :
- 1.5kgs snapper
- 2 tbsp oil
- 2" ginger or more(sliced)
- 2 medium size red onions
- 2 whole garlic
- 8 cut chili padi
- 4 stalks coriander with roots
- 5 tbsp taucu/fermented soy bean paste
- 2 tbsp oyster sauce
- 1 tbsp sesame oil
- 1 tbsp soy sauce
- 1/2 tbsp white pepper
- 2 tbsp cooking rice wine (optional)
- 2 big lime juice or 3 tbsp juice(I have added the lime pulp too)
- 2 tbsp sugar
- cut spring onions for garnishing
If your fish is not big or thick, you need just 8 mins of steaming with the fire stove. If you are cooking with an induction stove like mine, then you need 15 mins of steaming. If you have a big fish, then you will need slightly longer BUT not too long. Make sure you boil the water in the wok before you put the fish to steam.
You can also fry the sauce ingredients in a wok first with oil. Steam the fish without any sauce, once the fish is ready then pour the fried sauce over. This way is equally delicious. Try it! I love 酱蒸鱼 Spicy taucu steamed fish!

Retort Bento RetoBen 'Gyu-Don Beef Bowl'. This is new type bento and I like the concept. It's convenient because you can eat it without microwave(without heating). The expiration date is long(3 years), so it's a kind of emergency foods. Btw, Today(September 1st) is Disaster Prevention Day. The day reminds us of the 1923 Great Kantō earthquake. The RetoBen is suitable for that day, isn't it? The only thing is I felt the process(especially before microwave) wasn't appetizing. The tastes is very good so it's a bit bummer. The drink is Fruit Punch Jelly. It contains fruits pulp and nata de coco. The package images Hanabi fire works. I want to see Hanabi festivals next year. The bento is about 500 yen(4.6 USD), The drink is 250 yen(2.3 USD).
