🥩🔥 All steaks are dry-aged in-house for 30 days and they are sous vide before grill to ensure that the meat is evenly cooked inside.

This method not only helps the restaurant to serve you the grilled meats faster, but also suits people who don't like to see "bloody" meat in their steak.

The Aquaponics Salad with Yoghurt and Lantau Honey Dressing a must-try side dish that came together with our Porterhouse 🥩

Excuse me, I'm not a salad eater but it is such a delicious salad with honey dressing 🍯 that is produced locally from Mui Wo. 🤤

It went perfectly with our medium rare 30-day dry-aged bone-in @44farms Texas Porterhouse 🥩.

Another highlight is the S'more dessert that we enjoyed so much.

We finished our dinner with a final round of cocktails concocted by @kay_siu3 at the bar.

🤩🤤 Craving for this Chinese Cabbage with Yunnan Ham Broth AND Tofu Chrysanthemum Ginger Soup that I had in Hong Kong.

During our suitecation at @sheratonhongkongtungchung recently, we met Yue's Executive Chef Jacky Chung over lunch and had an enjoyable and candid chat.

This Chinese Cabbage with Yunnan Ham broth is one of Chef Jacky's favourite signatures inspired from his earlier days working in Guangzhou.

Born and raised in Hong Kong, he believes that a good Chinese soup doesn't have to be the usual delicacies like the highly controversial Shark's Fin soup or something overly fancy.

🤤 This broth is cooked over 8 hours with Yunnan Ham. Even with a simple ingredient like the Chinese Cabbage that is beautifully crafted for aesthetics and representation, the taste of this dish is more than meets the eye.

You can't visit Yue without trying this soup. I highly recommend it.

😍 Another favourite dish from my lunch is the dessert: Tofu Chrysanthemum Ginger Soup.

Chef Jacky cut this tofu into the shape of chrysanthemum in less than 1.5 minute! Amazing 🔪 skills.

I love that this dessert is lightly sweetened by the local 🍯 honey from Mui Wo.

This ginger soup made me feel really good after the lovely lunch at Yue. What a great end to the meal.

Tip: Start your meal with Yue's Signature Tea made from ginger and peach. The aroma made us feel instantly relaxed and calmed. 💯 Recommend it.

Man Mo Temple, located within a 15-minute walk from the main market, is not only the oldest temple in Mui Wo where generations have prayed to Chinese deities since the Ming Dynasty in the 16th century, but it is also where disputes over silver mining were resolved. Situated at the midway point between Pak Ngan Heung, which translates as “white silver village,” and the Silvermine Cave, it served as a court where villagers came for conciliation before going to work or home.

Originally a lead ore mine, the silver extracted among the minerals inside the Silvermine Cave had attracted flocks of miners. Walking along the waterfalls from Man Mo Temple, one reaches the lower cave of the mine where the mining activities took place. In 1886, Tien Wah Mining Company established by Chinese developer Ho A-mei started large-scale mining operations in the area, which were later passed to other entrepreneurs including Tong King-sing and Xu Run. The mining finally came to a halt in 1896 due to the poor quality of the silver minerals.
